Well, last night, I finally got it.
Demon's Souls. From Software's recent claim to fame!
I know I'm behind the times. Just tried it to tonight, and I absolutely HATE IT.
I went in expecting something beyond King's Field, and I wasn't disappointed there, but I was gravely disappointed for other reasons.
I don't mind the stage/mission approach, but I really don't like the linear-die-and-start-the-level-completely over bit.
This game isn't difficult, it revolves around loss - and that's not fun, its frustrating.
Let me tell you my experience thus far and this similar scenario has happened both NEW GAMEs I started.
I play through the level - I'm kicking ass.
I take a few hits here and there...
I run into this bad ass knight, and after a glorious fight, he slays me with 500+ souls in my inventory.
No biggie, I'll find that spot again.
Use 4 grasses this "life".
I respawn.
I fight through the enemies again. I run past a couple of them.
By chance a guard parries my attack and counters(whatever they called it in the game) and its an instant death, 50 feet from my death spot.
500+ souls - GONE. I'm pissed that the new replacement spot just has 200+
I used 3 grasses.
I respawn.
I run past half the enemies.
I pick up my 200+ souls, but I get boxed in a corner with too many people surrounding me, and even while blocking I die because my fatigue is too low.
I used 4 grasses.
I respawn.
I run past most of the enemies. I get fairly far, my armor is damaged.
I have to hit guys 3 times rather than 2 because my weapons are dull.
I run out of grasses, but I have 6 Slave Shields.
I die close to the beginning with less than 40 souls.
I respawn.
I kill the first "area" of baddies,
run back and exit the stage
come back in
I kill the first "area" of baddies,

I still don't have enough souls to by one damn moon grass.
I try to press forward and die in some remote area.
I respawn.
I run past ALL of the enemies.
I look everywhere and I can't find where I died to get those souls.
3 zombies rush me and I can't fend them off.
I'm left wandering around nexus with no souls, completely dull weapons and armor and I can't get through the first level (the only level I can pick) and no way to get out of this hole I dug myself into.
Please Please PLEASE tell me I'm missing some redeeming aspect of this game.

At first I kept getting slaughtered by the Red Eyed Knight guy, then when I discovered I didn't have to fight him, I got to Phalanx and couldn't beat it. The little slug-minions coming at you from all directions overwhelmed me, I used all my healing items and Turpentine, then was completely screwed when I died and respawned.
So no, you could say it's not my favourite game ever.

I think I'll try to progress further in the game. Even if I have to soul farm areas for hours to repair/supply, I will.
I did a little research. Assuming you live, it looks like your character has the chance to level up to 999.
That sounds.... blessed.
Unfortunately, the opportunity to level up doesn't happen until the first area is completed.

Once you get far enough into a level you open up short cuts for your return trips to make it faster.
You can always come back and farm souls once you finish a level. Just concentrate on making progress.
Take things slow and be precise in your attacks and defense. Certain classes are much easier to play as well.
I'd suggest you read a guide to help you locate weapons/armor and how to build your class.

If it's the Blue Eyed Knight...Guard. Guarding is your friend, the best friend that will never abandon you as long as you don't screw with him.
Don't worry about the Souls too much, you get a ton for beating the boss at the end (which has an easy shortcut to if you die on him so you'll be fine there). It's all about acting as if you were actually that guy. You wouldn't run into hordes of enemies, and you wouldn't go "guns" blazing either. You'll be tactical, defending almost all the time, until you see an opening, then striking when it matters most.
If you can't beat the Blue Eyed Knight no matter what you do, you'd best return the game because he's easy in comparison to most later enemies (not including bosses either).

(and the times I would die, I got a little too brave/stupid and died a King's Field death... like trying to lift the items underneath the two dragons.
My biggest hangup was, as what's always been said.... I was trying to get past this red eyed knight and I died a few times from that. The heavy knights, I seem to handle better when I just circle-strafe around them. I had to learn pretty quick that I had to be somewhat unrelenting with my own attacks, or they'll keep eating potions. They're not a problem at all.
I try not to get too crazy with block as that (coupled with attacking) can drain my fatigue and leave me vulnerable. That was a major problem I'd have before. I'm glad this game doesn't allow me to do anything resembling turtling, and I have to consciously watch my fatigue and fight in bursts.
I'm also a heavy armor kind of guy. Once I found that merchant that sold plate armor, I got myself the whole set and started thrashing again.
I also learned to take advantage of the environment if at all possible. Like letting the zombies with flame knives hit explosive barrels, hit the crate to let the cannonballs clear out an upper wall, or let the dragon purge the bridge. I still get the experience/souls.
I've completed the first area. (with Phalanx defeated, I think that's his name) second try. Go figure, the fight goes a lot easier when I use firebombs and turpentine. It took me 15-20 minutes to find the "monumental" afterward, but I'm glad that's over with. I like this chick dressed in black with napkins over her eyes. I can see her to level myself up. I'm currently Soul Level 10, complete plate armor, battle axe +2.
I don't know if this is good or bad for 7 hours of play. (like popo, I think 6 of those were just beating the first level)
...but I'm finally starting to get the hang of this game.
Now if I could just change the title of this thread....

Ironically enough, you took the heavy armor off your paladin knight and gave him a nimble fighting approach....
I took my "ninja" and armored him up like a tank.

As you may have noticed, putting on too much weight with equipment will slow down your dodging considerably. One of the stats can help to counter this, as will a ring you get later.
When you get to the last boss in the Tower of Latria (3-3), make sure you're online, it makes the fight much more fun.
I recommend researching world and character tendencies and understanding those mechanics.
I lent this game to a co-worker, he couldn't handle it. He ragequit in ten minutes. Granted, this guy also has pretty bad taste in games. He didn't like Shadow of the Colossus, Fallout 3... can't remember which other games he wasn't into.
The guilty pay the price.
