Contrary to popular belief, no, Touhou's difficulty level for its shoot em up is quite easy, even on lunatic, since the general pattern is bout the same, if you can 1 Credit Clear (1CC) Easy mode, you can clear normal, if you can 1CC normal you can clear hard, so on and so forth. The only one with a relatively messed up difficulty setting is touhou 12 (lunatic/hard Kogasa is harder than lunatic Ichirin, the level 2 and 3 boss respectively), and 12.8 due to the unique system they have. The deathbomb system (you can negate your death by bombing within a 0.1 second timeframe) also makes the game somewhat easier than other shoot em ups. For a genuinly hard Shoot em up, R-Type and Raiden are tougher compared to Touhou.
Also, there isn't really much of a need to actually play the "official" Shoot Em Ups to understand touhou, or the fighting danmaku game. The other games are also good, like "touhouvania" line and games like Pocket Wars Evo. A quick search should get you their downloads.
Anyhow will start dumping links for the games:

Note: If you get an error saying that the file "mscvr100.dll" is missing, you need to run the "vcredist_x86" executable, included in the game directory, to install the necessary Microsoft Visual C++ 2010 Redistributable libraries. Be sure to move this executable outside of the game directory, because it will not run if there are Unicode characters in its path. If you get an error saying that "d3dx9_43.dll" is missing, search for it in Google, download it and upzip it if necessary, and drop it into the game folder; alternatively, probably the better solution is to update your DirectX 9.0c.
