Really does depend what genre your looking for but to name a few, I recommend all of these I have read up to most current chapter in each.

No Particular order:
1. Mahou Sensei Negima (probably my fav)

2.Fairy Tail (good blend of magic, fighting, story, comedy - as a whole I think it's better then Naruto and Bleach) - The author also did a Manga of Monster hunter
Which was quite good.

3.Naruto (needs no introduction I'm sure)

4.History's strongest Disciple Kenichi (Marital Arts based action, comedy, anything else a guy could want)

5. Beelzebub (probably the funniest manga on the list if you want a good laugh I recommend it same category as #4)

6. Claymore (Based on half-human half demons a darker story but great in its own right - the drawing in it is ... unique)

7.Air Gear (Amazing story the Show doesn't due it justice - now if only the author could understand basic physics... but o well)
Often in ones own madness resides genius. Thus for a mind seeped in madness, the imagination is limitless.

I second Fairy Tail, and Mashima-san also did MH Orage which is pretty decent.

The art is One Piece-ish though they are different artists, as has been said the story is a good mix of action and magic and other stuff.

A good pick up, and it is not as long as some of the others so easy to catch up with too. It is the only manga I read regularly and I live in Japan if that says anything. Totally worth it.

This.

I've found Air Gear to be one of my favorites. It's 4th in my mind.

Slice of Life:
Bakuman: A story about two dudes trying to make it big as manga artists. It has a steady pace and really good story.

Sport/Comedy:
Hajime no ippo: A classic! sports and comedy couldn't be put together as immaculately as this. I don't really like sports mangas/anime in general but this sucked me in and never let me go.

Gag:
Saint Young Men: I quote- "A ticket to hell has never been funnier". Its about Jesus and Buddha coming down to earth to experience what's it like to be average Japanese.

Ecchi-Comedy:
Golden Boy: Humanities through the eyes of a genius... but not everything he sees and learns are safe for work.
