For me, it is:
Evangelion- Fast paced, purified epicness of ridiculous proportions with a couple of giggles early on. Could really connect to Shinji and Rei and felt much deeper than anything else I have watched.The plot does get quite complicated, but you should survive
Bamboo Blade- Probably the most emotional show I've watched, loved every character. Awkward moments and laughs with lots of dramatic irony. The fights were heated and had my heart pounding. Beware, there is a sequence of 3-4 consecutive episodes which all end in a huge cliffhanger. Have lot's of free time.
Black Butler- A combination of just about everything. Great fight scenes, lots of awkward moments and quality comedy. The ending was well done, but I felt it was let down slightly by the fact that you always knew it was coming. One of my favourite watches of the year.
Darker than Black- Loved the fighting and interesting and emotional plot line. I CANNOT wait for an english dub of the movie.
Elfen Lied- I can't remember who recommended this to me, possibly as a joke troll, but then it got serious and I watched. For me, I think this was as, if not much more emotional than Evangelion and pulled on my heart strings with ease. Simply amazing, I loved it even if NSFW. The opening theme tune is one of my favourites of all time. Do not watch this if you are weak of heart, you only have to watch the first scene to understand why. If you watch a lot of anime and want something a bit different, this is what I recommend.

Eden of the East- Gorgeous animation and unique plot line add together to make a truly great show. Only in third because of how short it was *sadface* Watch the movies as well.
Death Note- Dark and thought provoking. I loved it for it's puzzle qualities and those moments of "Oh. So that's how it worked". Ranked down for the ending which I personally didn't like because of portrayal of charcter's characters (If that makes sense), and the seemingly cheap ending. Otherwise a great watch.
Melancholy of Haruhi Suzumiya- A fun light hearted frolic of a series. Constantly made me think "Did they really just do that?" Nearly a must watch but it won't be for everyone. Again, amazing animation.
Cowboy Bebop- A catching series that made me smile at the end of every episode. For me I only really started to notice a main story towards the end but still a good watch. Brilliant ending.
Moribito- There is no rest for the wicked. This show never seemed to not have a huge fight. An acquired taste. Nice animations with good character development. Another fine ending.
Gundam Wing- Ranked way down here 'cuz I didn't like how long it was and the long drawn out scenario's. If it had been condensed to 26 episodes, it may have been better. Bit of a bore of an ending, but it still made me smile.
Silent Mobius- Had it's good and bad points. Good characters and main figure. Ultimately down here due to an uninvolving storyline and poor ending. One or two good emotional peaks.
Basically, from this you can probably see that I like character development and relationships, with a few intense action scenes shoved in there. You could say a bit mainstream, but when no one around you watches anime, you are the mainstream. Give me another Bamboo Blade or Eva and I will kiss you.
