My Situation

Part of my problems stem from the fact that I usually use GS for EVERYTHING. I also have a small interest in hammers but I've never been able to get them to work for me. Anyways, I think I am taking WAY to long to finish my quests as many of them go into the last 5 mins before I finish them and I'm wondering if it's me or my if it's my weapons and armour.
The Armour I've been using atm is the only high rank armour I have. A full Hermitaur Set gemmed for Attack and Guard. It's fully upgraded and gives me Guard +2, Attack Up(Med), Guts, Flat Footed.
I also use a range of swords, none of which I use exclusively. (I change often.) Diablo Destroyer, Hidden Blaze, Gaoren Coin. The hammers I have that I don't use very often are the Diablos Hammer and The Juggernaut. I used DeathStench S Armour for a long time and pretty much upgraded at HR 8. So yeah, I'm basically directionless. I have no idea what to aim for and everything is taking WAY to long to farm and so on that I just think I'm never going to get anywhere.
So yeah, if you guys have any suggestions for armour or what direction to go in, what to aim for, what to kill or anything else I'd be happy to hear it.

Change your armor. Get Ceanataur S for Sharpness+1/Attack Up large/Sharpening Skill inc,
or since you're at HR8, get Rathalos X and gem for Sharpness+1/Attack Up Large/Unsheathe Crit.

I just got the decider and I'm working on upgrading it. Just need to kill a few Blangoga's.
I'll try landing full charges more often. I usually run out of all my potions by the end so maybe it is just me. I dunno, I'll see how I go I guess.

I see 2 main problems here.
One is your armor set, and second problem is the one that you already have acknowledged; your love for the GS.
The skills on your armor set is not effective for a GS. Strong raw oriented weapons like GS and Hammers should be looking towards armor skills that directly increase DoT. That guard skill CAN be useful, however, it is not needed. At G-rank, it is assumed you know the monster's movements enough to be out of its range in time, or roll through it. That's 15 skill points into something you don't need as a GS user. GS guard is rarely used at the upper levels, unless you are guarding against screams possibly (diablos and khezu).
Aim for skills like Unsheath critical, or fast charge (allows you to take advantage of more openings) and reckless abandon (increases affinity). I have no idea what guts and flat footed does, but I have never used them, nor have I seen them on many armor set threads. They are likely skill sets you don't need for your weapon.
Don't get me wrong. GS is one of the fastest killers in the game. The 3rd charge on head can rape monsters. However, I believe that you should practice using more than just one weapon to beat the monsters in the game, so you have more options available to you. Take diablos for example. It's weakness is its tail, but it is very easy to miss hitting it with a GS since it is such a slow weapon, diablos may turn around before you get to hit its tail. Here's where having more than one weapon choice can help. A good ice DS can decimate diablos, and the strategy is quite simple. Hit legs till it trips, then dance away on its tail. Or if you are a ranged weapon user, you can use a spread bow to hit the tail, or a decent HBG to pellet it to death. These tactics are quite simple and easy compared to the GS.
And if I may be frank, I think you need more time to practice. You are taking WAY too long, even though it may be G-rank. Go back to High-rank monster until you feel more comfortable. Try hammering Loses and bowing plesssies. Try Lancing hermiataurs and LSing gypceroses. ETC. Find out at least one other weapon you feel comfortable using. While you are at it, you can farm for Azure los set, which comes with RA+1 and HGE, which will help you if you are using weapons with out guarding ability.

Ahh right, I see what you mean. Actually, Guts leaves you with 1 HP if you get hit by a strong attack and Flat Footed is a negative skill I couldn't Gem out that lowers your stamina faster. I havn't really had much of a problem with it.
I agree with what you are saying about having armour that compliments your weapon. Actually, I usually try to do lv3 Charges as often as I can and I've practically mastered short charging skill. I'm not sure what exactly is making it seem harder for me to kill things quickly. I actually enjoy using all kinds of weapons. The only thing is I don't have many good ones of all types to use. Hammer is my main secondary weapon, and I havn't really made any others. I am usually ok with all kinds of weapons, something I am quite proud of is my Sword Saint Piercing.
I will admit another thing though is that using GS has made me very slack with elemental weaknesses. Because elemental attribute is nigh on useless on a GS I have never bothered to learn each monsters weakness. I guess this could be another avenue to explore to improve my game.

Guts are usually used with ranged sets at G-rank, since they have lower defence. It is also used to trigger heroics, but I don't think you want to use heroics yet
Also, I think you should practice more with your hammer then. It is a very easy weapon to get used to and you don't have to worry as much about weakspots and element weaknesses just like the GS.
If you wish to list any monsters you are having trouble with, we may be able to help you out better.

Also, Blangongas aren't your usual lv3 charge fodder so don't force it too much. Quick snipes do the job just fine, they don't have that much HP anyway.

Everyone agrees, change yr armor to get a different set of skills.
This is one of my first g rank sets. Skull face, then Cean u/u/z/z gemmed for ra+3, sharpness +1, and sharp sword, that's with a one slotted weapon. With that solo'd hr6 two queens in 8 mins with khezu thunder.
Or if you wanna be safe, take out a few celebrity jewels and gem in evade+1

Yeah, they had almost the same scenarios..... so copy/paste!!!
You could also tweak that set so it gave Earplug instead of sharpsword if you have trouble with roars.

Anyways, this is what I've done so far:
I solo'd Akantor a heap of times and sold the materials for money, then I fully upgraded the Decider so I'd have a reasonably good GS. Then I farmed G-rank Khezu so I could make a Khezu Thunder Maul, with this I went and killed Terra S. Ceantaur a bunch to get some more materials. I also killed Silver Los a bit. (Was A LOT quicker after I realised I should be aiming for it's wings and not it's head. Still need to get used to it though. I can hit the head really easily with GS)
The Armour set I'm usuing now is a combination of Rath X and Cenataur Z stuff (I think, can't be sure if they are the right letters from memory.)
which I'm still in the middle of gemming to give me Sharpness +1, AoU and Attack Up M or L if I can fit it.
